Blueberry Cardamom Cancer-Fighting Muffins

Cardamom has the most amazing aroma and flavor. Partnered with the sweetness of blueberry, you have a match made in disease-fighting heaven.

As a simple breakfast idea, or midday snack, these muffins will satisfy any sweet craving, with the best part being that they are only sweetened by fruit!

For kids or adults, these muffins can be made nut-free, and gluten-free.

Ingredients:

  • 1 3/4 cup of overripe bananas, mashed (3-4 large)

  • 1/4 cup plant-based milk of choice

  • 1/4 of olive oil

  • 1 flax egg (or 2 additional tbsps of milk)

  • 2 tsps of vanilla extract

  • 2 cups of oat, whole wheat, or almond flour

  • 1 tsp of baking powder

  • 1/4 tsp of sea salt

  • 1 1/4 tsp of ground cardamom

  • 1/2 cup of blueberries

Serving 12 Cooking Time 20 minutes

Recipe:

  1. Preheat oven 350 degrees F. Lightly grease your muffin pan with oil or use muffin liners

  2. In a large bowl, mash your bananas. Whisk in your milk, oil, egg, and vanilla.

  3. Add your dry ingredients, including the blueberries, to the wet mixture and mix all together

  4. Transfer the mixture to your greased muffin pan, making 12 muffins. Bake for 2o minutes or until a toothpick inserted in the center comes out clean.

  5. Let them cool a few minutes before removing from the pan.
