Vegan Breakfast Recipe:

Tropical Papaya Boat

This breakfast recipe is so easy to make and starts your day off feeling full and rejuvenated.

All the fiber from the fruits, protein from the yogurt, healthy fats from the nut butter, and healthy carbohydrates from the granola will check off a lot of those boxes for you daily macros.

You can fill you boat with any toppings you like but this is how I like to eat them:

Allisun’s Vegan Papaya Breakfast Boat:

Ingredients:

  • 1/2 a papaya

  • 1 cup of mixed berries and kiwi

  • 1/2 cup KiteHill unsweetened vegan greek yogurt

  • 1 tbsp Trader Joe’s mixed nut butter

  • 2 tbsp of Paleo Caveman Grain Free Granola Almond Butter Crunch

  • 1 tsp chia seeds

  • 1 tsp flax meal/seeds

Recipe:

If your papaya is not already cut in half then cut in directly down the middle into two halves. Scoop out the black seeds, you can either keep them to eat later or throw them away. Place the yogurt in the middle of the papaya in the dip. Then start layering the toppings starting with the fruit, granola, nut butter drizzle, and seeds. Voila your boat is ready to set sail into your stomach.
