Healthy Hormone Nourishing Bowl Series 4

Using one of my favorite flavors, curry, to ignite balance into your hormones and love onto your tastebuds

Time: 20 minutes

Ingredients:

  • 1/2 a box of whole wheat pasta/ chickpea pasta/ lentil pasta

  • 1/2 red bell pepper

  • 1/2 yellow onion

  • 1 tbsp ginger, minced

  • 3 garlic cloves

  • 1 tbsp tomato paste

  • 1 tbsp curry powder

  • 1 cup vegetable broth

  • 1/2 cup full fat coconut milk

  • 1 tbsp coconut aminos

  • 1/2 tbsp maple syrup

  • 1 1/2 handful of spinach

  • 1 tbsp lime juice

Toppings:

  • 2 tbsp cilantro

  • 2 tbsp shredded coconut

Instructions

Step 1: Start cooking the noodles according to packaging.

Step 2: Meanwhile, cut the bell pepper into strips and julienne the carrots with a peeler (or just make thin strips with a knife), set aside.

Step 3: Chop the onion, mince the garlic and ginger. Add these to a medim hot pan and saute (in oil or water) until the onion starts softening.

Step 4: Now add the tomato paste, curry powder, a splash of water and saute for another minute while stirring into a paste.

Step 5: Now add the vegetable broth, coconut milk, coconut aminos, and maple syrup, bring to a simmer.

Step 6: When the curry is simmering, add the bell pepper, carrots, and let simmer for five mintes until they are slightly soft.

Step 7: Then add in the spinach and lime juice, turn off the heat but continue to stir until the spinach is wilted.

Step 8: Serve in bowls by adding the noodles, the curry and lastly the cilantro and shredded coconut.
