Sweet & Savory Vegan Breakfast: Banana- Matcha -Choco Chip Pancakes

There’s nothing like the occasional savory breakfast, especially on the weekends!

I love making pancakes Sunday mornings and I can confirm these pancakes have been husband APPROVED!

I love being experimental in the kitchen, especially when the creations are something so delicious.

The matcha in these pancakes provide an excellent antioxidant boost in the mornings as well as a little caffeine kick. Matcha is powdered green tea and it tastes amazing in smoothies, baked goods, and of course, served as a latte with some almond milk.

I have also added the super foods I have on hand at my house but feel free to substitute the alma powder for maca or chaga powder.

Recipe:

Ingredients:

  • 1 cup of oat flour (regular flour is fine)

  • 1 tsp baking powder

  • 1 tbsp alma powder (optional)

  • 1 tbsp matcha powder

  • 2 tbsp of chocolate chips or cacao nibs

  • 1 cup of almond milk (or any other non-dairy milk)

  • 1 banana smashed

  • 1 tbsp flax (for flax egg)

  • 1 tbsp of water (for flax egg)


Combine all the dry ingredients in a bowl including: flour, baking powder, alma powder, and matcha powder. Get another large bowl and smash a whole banana until smooth. The older the banana the easier to smash with no chunks. In a smaller bowl combine the flax meal and water for your flax egg. You can add a little more water if needed to make a gooey substance, should not be watery.

Combine the wet ingredients into the bowl that you smashed the banana including: almond milk and flax egg.

Add the wet ingredients into the bowl with the dry ingredients. Stir gently to make a thick substance not a watery one. Add the chocolate chips in last.

Heat a nonstick skillet over medium heat. Optional to add a tsp of olive oil to heat on the pan. Add a 1/4 cup of the mixture to the skillet and flip when the side heated is golden brown.

Serve with honey, maple syrup, fruit, or nut butter. I also like to add a tsp of chia seeds to my toppings but it really is up to what you like!
